5-Minute Strawberry Ice Cream

With the summer heat finally here, it’s nice to make a dessert that is refreshing and doesn’t involve slaving over a hot stove. I was excited to find this recipe at Lifestyle.ca that claims to take less than 15 minutes in total! Basically it involves using a blender, or food processor and mixing up strawberries, sugar and whipping cream in about 5 minutes…talk about a dessert that’s easy and quick. I just don’t see how you can go wrong with this sweet ingredient combination. If you’re patient, you might want to freeze it before serving. But either way, it’s going to be cool and creamy…perfect for a hot summer’s day. Enjoy!
5-MINUTE STRAWBERRY ICE CREAM
2 ½ cups frozen strawberries
½ cup sugar
2/3 cup whipping cream
In a food processor (or blender), combine the frozen strawberries and the sugar. Process until the fruit is roughly chopped — the mixture will look dry and chunky. Now, with the processor running, add the whipping cream through the chute in the lid until the mixture is thick, smooth and creamy. You may have to stop the machine once or twice to scrape down the sides.
Serve immediately (it will be soft but incredibly delicious), or transfer to a container and place in the freezer so that it firms up slightly before serving. Any leftovers (ha!) can be kept in the freezer for up to a week.

These Cute Pies Take Minutes to Assemble & A Few Hours To Freeze!
Summer’s not over yet! So while I’m holding onto the last few good-weather days, I’m looking for desserts that are easy and quick and that remind me of picnic season. I found a recipe for Frozen Creamy Strawberry Mini Pies from FoodsUnion.com that doesn’t require slaving over a hot stove. The best part, besides being super easy, is that it contains some of my favourite pie ingredients like cream cheese and whipped topping. Yum! Plus who doesn’t love strawberries? Please let me know if you experiment with other berries in this pie. So put on your sun screen and enjoy these adorable mini pies!
FROZEN CREAMY STRAWBERRY MINI PIES
8-oz pkg cream cheese, softened
1 cup cold milk
1 pkg (3.4-oz) vanilla flavor instant pudding mix
1 1/2 cups thawed frozen whipped topping
20 vanilla wafer cookies, coarsely broken into pieces
1 cup sliced fresh strawberries
1/2 cup strawberry ice cream topping
Beat cream cheese until creamy in a large mixing bowl using an electric mixer. Gradually beat in the milk. Add the dry pudding mix and beat 2 minutes. Stir in the whipped topping, vanilla wafers, and strawberries. Swirl in the ice cream topping.
Spoon filling mixture into 12 paper-lined muffin tins. Freeze 4 hours. Remove paper liners before serving. Feel free to top with sliced strawberries for a pretty presentation.

I’ve spent the last week in an extreme heat wave, so when I found this recipe today I had to share it in case you’re in need of some cool relief too. Not only does this Easy Banana Soft Serve sound delicious, it’s also low in fat! Plus, this dessert uses only 4 ingredients making it both easy and quick! I especially like how you only need 1 tablespoon of sugar for 4 servings so you get to taste the natural sweetness of the bananas and ricotta cheese. This is how Kouz-Cooking.com describes this recipe: “As rich as ice cream and as smooth as frozen custard.” Doesn’t that sound deliciously refreshing in this summer heat? Enjoy!
EASY BANANA SOFT SERVE
2 Ripe, frozen bananas
1/2 cup Part-skim ricotta cheese
1/2 teaspoon Vanilla extract
1 tablespoon Sugar
In a food processor, combine frozen bananas with remaining ingredients. Using a steel blade, process until smooth. Divide into 4 individual serving bowls and serve right away.
Each serving provides 109 calories, 4 g protein, 3 g fat, 18 g carboydrate, 39 mg sodium, 10 mg cholesteral.

This Baskin-Robbins Replica Uses Only 5 Ingredients!
I just found a terrific article on DailyBreeze.com that shares 4 delectable ice cream cake recipes; 2 of which are replicas of restaurant desserts. When I think of ice cream cake, I think of summer parties like birthdays, showers and barbecues. And I definitely think “store-bought”. Ice cream desserts just never seem to be easy and quick to me…until now! Your guests will be so impressed when you serve these homemade simple desserts. The hardest part is waiting for the cake to freeze up. The recipe below requires only 5 ingredients and is a replica of the Brownie a la Mode Ice Cream Dessert at Baskin-Robbins. Enjoy!
BROWNIE ICE CREAM DESSERT CAKE
1 1/2 cups Oreo cookie crumbs
1/2 cup thick butterscotch caramel OR caramel ice cream topping (Mrs. Richardson’s brand preferred as it is thicker than others), heated slightly in microwave until of drizzling consistency (should NOT be hot)
2 (1.5-quart) containers chocolate ice cream (or other flavor as desired), softened slightly, about 10 minutes
1 cup crumbled brownies (homemade OR store-bought)
1 cup chopped Rolo candies OR other caramel chocolate candies
Line a 9-inch springform pan with non-stick foil. Sprinkle crumbs on bottom and press to make an even layer. Drizzle evenly with heated caramel topping. Place in freezer 30 minutes to firm up. Spread softened ice cream evenly over caramel, smoothing top with a knife. Sprinkle top evenly with brownie and caramel candy pieces, pressing in slightly. Freeze until firm, 4 to 5 hours. Then top with a piece of waxed paper and wrap in a double thickness of foil. Return to freezer until serving, up to 1 month.
To serve, remove from freezer and let stand at room temperature 15 to 25 minutes. Remove springform side of pan and with a large, sharp knife, cut into slices. Serve immediately. Makes 10 to 12 servings.
NOTE: The caramel in the Rolo candies becomes hard when frozen. Be sure to let dessert stand prior to serving. Or use another caramel or other candy that doesn’t harden as much.

I’ve never really considered myself to be a big fan of ice cream because it’s not usually my first choice when I want something sweet. It’s made with some of my favorite things…peanut butter, frozen whipped topping, and ice cream sandwiches! I know that the summer is a few months away, but I don’t think there’s ever a wrong time to eat this cake. You can even make a lower fat version using products like The Skinny Cow or Breyers who both make a low fat ice cream sandwich. The best part is that this cold, deliciously rich treat takes only 30 minutes to prepare and requires only 1 hour to firm up. I know you’re going to love this!
HOT FUDGE ICE CREAM BAR DESSERT
1 (16 ounce) can chocolate syrup
3/4 cup peanut butter
19 ice cream sandwiches
1 (12 ounce) container frozen whipped topping, thawed
1 cup salted peanuts
Pour the chocolate syrup into a medium microwave safe bowl and microwave 2 minutes on high. Do not allow to boil. Stir peanut butter into hot chocolate until smooth. Allow to cool to room temperature.
Line the bottom of a 9×13 inch dish with a layer of ice cream sandwiches. Spread half the whipped topping over the sandwiches. Spoon half the chocolate mixture over that. Top with half the peanuts. Repeat layers. Freeze until firm, 1 hour. Cut into squares to serve.
A Healthy Ice Cream Sandwich?

Simple ingredients and only minutes to assemble!
Just in time for Valentine’s Day, I’ve found a sweet treat recipe that claims to be healthy! Actually, it’s from The Canadian Press, which makes it sound so much more official, doesn’t it? Anyway, it’s hard not to eat sweets on this day…whether you receive candy from your special friend or you devour a box of chocolates in misery, Valentine’s Day can cause an overindulgence of sugar. This recipe is for Chocolate-Walnut Lace Cookie Ice-cream Sandwiches. How delicious does that sound?! The best part is that this dessert is easy, with just a handful of common ingredients to make the cookies; and it’s quick to assemble too! Just don’t forget to buy the ice cream, or frozen yogurt (choosing non-fat frozen yogurt or ice cream will make this even healthier)! You can assemble the sandwiches earlier in the day and store them in the freezer. I think a dusting of icing sugar on top just before serving looks nice, and you can even add some fruit for a pretty presentation. That should give you some ‘health’ points too! Have a SWEET V-day!
CHOCOLATE-WALNUT LACE COOKIE ICE-CREAM SANDWICHES
1/4 cup granulated sugar
1 1/2 tbsp butter
1/4 cup quick-cooking rolled oats
2 tbsp chopped walnuts
1 tbsp unsweetened cocoa powder
1/2 tsp baking powder
1/2 tsp vanilla extract
1 large egg white
2 cups low-fat strawberry or chocolate ice cream or frozen yogurt
Heat oven to 325 F. Line a large baking sheet with foil and coat it with cooking spray or brush it with oil.
In a small saucepan over medium heat, combine sugar and butter. Cook, stirring constantly, until mixture is melted and bubbling, 1 to 2 minutes. Transfer mixture to a medium bowl. Add oats, walnuts, cocoa, baking powder and vanilla, then stir to combine. Set aside.
In a small bowl, use a fork to beat egg white until it is slightly frothy. Measure out 1 tbsp of the beaten white and stir it into cookie batter; discard remaining egg white or reserve for another use.
Drop half tablespoonfuls of the batter about 2 inches apart on the prepared baking sheet to make 12 cookies. Bake for 8 to 12 minutes or until cookies look dry and are just beginning to colour on top.
Slide sheet of foil and cookies off baking sheet and onto a flat surface. Let cookies cool completely then peel off foil.
To assemble sandwiches, set a cookie in the centre of a dessert plate. Top with 1/4 cup of the ice cream. Set a second cookie on top of the ice cream, then top that with another 1/4 cup of ice cream. Set a third cookie on top.
As you assemble the sandwiches, place them in the freezer until ready to serve. Makes 4 servings.
Nutrition information per serving (values are rounded to the nearest whole number): 232 calories, 82 calories from fat, 9 g fat (4 g saturated, 0 g trans fats), 16 mg cholesterol, 33 g carbohydrate, 5 g protein, 2 g fibre, 150 mg sodium.
Easy Frozen Chocolate Bar Cookie Cake

It takes 4 ingredients & a few minutes to put together!
When it comes to desserts, easy and quick are my priorities, and of course they have to taste great! Second, if I can bake with ingredients I already have in my kitchen, it’s a big bonus. A friend of mine told me about this frozen treat years ago. As a matter of fact, the recipe was so easy, she didn’t even have to write it down for me! I love that! And when I tried it out for the first time my entire family loved it…my mom and dad aren’t too hard to please, but my sister and brother LOVE to critique my desserts! The reason I chose to share this recipe is because it truly is a quick and easy dessert and it combines ingredients I think most people love…chocolate chip cookies, chocolate bars and frozen whipped topping! Ohhh it’s delicious! Now let me warn you, it’s super quick to prepare but the dessert needs time to freeze, so you need to keep it in the freezer for several hours. I normally make it the night before I’m going to serve it. Okay, okay, I won’t make you wait any longer…here’s what you need to do:
FROZEN CHOCOLATE BAR COOKIE CAKE
1 package of your favorite chocolate chip cookies
1 Litre tub of frozen whipped topping
Some milk (for dunking the cookies…about a cup and a half)
3 chocolate bars like Butterfinger, Skor or Crispy Crunch (I use Crispy Crunch) — put in the blender to make chunky crumbs
First, make sure you leave the frozen topping in the fridge for the day so that it’s soft and spreadable…or leave on the counter for a few hours. You also need a 9×9 inch square dish that is okay to put in the freezer. Second, take a cookie and dunk completely in some milk, but don’t make it soggy. Place on the bottom of the dish…repeat until you have a layer of cookies. Third, cover the cookies with half of the softened whipped topping and sprinkle half of the chocolate bar crumbs. Next, repeat with another layer of cookies and whipped topping and finally top with chocolate crumbs…AND YOU’RE DONE!! Just place in the freezer and wait until frozen…I know, I hate waiting for dessert too! But the wait will be worth it because if you like all of the ingredients in this quick and easy dessert you’ll be a big fan like me!!
