Easy Banana Praline Muffins

Start to Finish, These Moist Muffins Take Only 30 Minutes To Make!
I was at my sister’s house last week and noticed 3 very ripe bananas sitting on her kitchen counter. When she told me that they would probably end up in the trash can, I quickly jumped into action, searching for recipes online. However, I had a big challenge…my sister isn’t a baker so she doesn’t have some essentials like baking soda and baking powder. Actually, I don’t think she even had any flour! Needless to say, my options were slim but I did find this dessert that’s super easy and quick to make, using pancake mix! It’s from Allrecipes.com and takes only 30 minutes from start to finish. My sister raved about these because they’re extremely moist and delicious. It’s a perfect recipe for those ripe bananas or for those who don’t know what to do with extra pancake mix. Enjoy!

3 tablespoons brown sugar
1 tablespoon sour cream
1 egg, lightly beaten
3 small ripe bananas, mashed
1/2 cup sugar

1 1/2 cups packaged pancake mix
In a small bowl, combine pecans, brown sugar and sour cream; set aside. Combine egg, bananas, sugar and oil; mix well. Stir in pancake mix just until moistened. Fill greased or paper-lined muffin cups two-thirds full. Drop 1 teaspoon of pecan mixture into center of each muffin. Bake at 400 degrees F for 15-20 minutes or until muffins test done.
Mini Donut Muffins

Make these “healthy donuts” in only 30 minutes!
I was so excited to bake these treats after work today. I walked through my door at 5:05pm and exactly 30 minutes later I was popping warm mini donut muffins in my mouth! Talk about a dessert that is both easy and quick! I found this recipe at Allrecipes.com and I’m thrilled to share it with you. All you need are simple ingredients and a mini muffin pan. And although they are technically muffins, the sugary coating makes them taste like the mini donuts you buy at the fair…except they aren’t fried in oil. Your friends and family will beg you for more. Enjoy!
MINI DONUT MUFFINS
1/2 cup white sugar
1/4 cup margarine, melted
3/4 teaspoon ground nutmeg
1/2 cup milk
1 teaspoon baking powder
1 cup all-purpose flour
1/4 cup margarine, melted
1/2 cup white sugar
1 teaspoon ground cinnamon
Preheat oven to 375 degrees F (190 degrees C). Grease 12 mini-muffin cups. (I got 18 muffins!)
Mix 1/2 cup sugar, 1/4 cup margarine, and nutmeg in a large bowl. Stir in the milk, then mix in the baking powder and flour until just combined. Fill the prepared mini muffin cups about three-fourths full.
Bake in the preheated oven until the tops are lightly golden, 15 to 20 minutes. (Mine were ready in 10 minutes so watch carefully).
While muffins are baking, place 1/4 cup of melted margarine in a bowl. In a separate bowl, mix together 1/2 cup of sugar with the cinnamon. Remove muffins from their cups, dip each muffin in the melted margarine, and roll in the sugar-cinnamon mixture. Let cool and serve.
Fabulous Oatmeal-Bran Muffins

Moist, Light, Delicious & Bakes Up In 15 Minutes!
I am a big bran lover. Some of my friends associate bran as being a “necessary” dietary ingredient, but to me, bran is deliciously flavourful and it’s only a bonus that it’s healthy for me too. I found this recipe for Fabulous Oatmeal-Bran Muffins years ago on Allrecipes.com and instantly fell in love. While the original recipe is for cake, the batter can easily translate into muffins. And this dessert is easy and quick to pull together and amazingly moist and sweet when they’re done. It’s not uncommon for me to gobble up three in a row right out of the oven. Of course, I never make this recipe without adding raisins (which isn’t in the original recipe) and substituting butter for shortening. If you’re a bran lover too, you’re gonna thank me for this one! Enjoy!
FABULOUS OATMEAL-BRAN MUFFINS
1 1/2 cups boiling water
1/2 cup rolled oats
1/2 cup whole bran cereal
1 cup white sugar
1 cup packed light brown sugar
1/2 cup shortening (or butter)
2 eggs
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 1/2 cups all-purpose flour
3/4 cup raisins or nuts (optional)
Pour boiling water over oats and bran cereal, and let stand 10 minutes.
Combine the remaining ingredients, and add oat mixture to them. Pour into muffin tins or to make cake, use two 8 or 9 inch pans.
Bake at 350 degrees F ( 175 degrees C) for 15 minutes for muffins and 30 to 40 minutes for cake or until a toothpick inserted in the centre comes out clean.
