These Adorable ‘No-Bake’ Treats Take Minutes To Prepare!

In honour of Canada Day and Independence Day, I wanted to share this dessert that is perfect for a summer party and doesn’t involve baking in a hot kitchen.  These are called Brownie and Fruit Kabobs and they look amazingly tempting on a dessert platter and best of all they’re easy and quick to make.  This recipe, as posted on LifeMadeDelicious.ca uses packaged brownies that require baking, but I recommend skipping this step and using store bought mini-brownies.  This will cut down your preparation time and also avoid having to use a hot oven.  Feel free to get creative with the ingredients.  If you’re not a chocolate fan, maybe use marshmallows instead…imagine using strawberries and marshmallows for a patriotic Canada Day look!  Have fun making these adorable kabobs and enjoy this festive weekend!

EASY BROWNIE & FRUIT KABOBS

1 pkg (roll type) Pillsbury Refrigerated Brownies OR a package of prepared brownie bites
4 cups (1 L) fresh pineapple chunks
5 cups (1.25 L) halved fresh strawberries
10 large bananas, cut into 1-inch pieces
1/2 cup (125 mL) semisweet chocolate chips
1/4 cup (50 mL) butter or margarine
20 (10-inch) bamboo skewers

Make brownies as directed on package. Cool completely, then cut into 1 1/4-inch squares.

Line cookie sheets with waxed paper. Alternately, thread 3 brownie pieces, 2 pineapple chunks, 2 strawberry halves and 2 banana slices on each skewer. Place kabobs on waxed paper.

In small microwaveable bowl, microwave chocolate chips and butter uncovered on High 1 to 2 minutes, stirring once until chocolate is melted. Drizzle over kabobs.  Makes 20 kabobs.

Make This Green Punch In Minutes With 5 Easy Ingredients!

Happy St. Patrick’s Day!  In the spirit of the holiday I have worn a green shirt and found this easy and quick punch recipe at Bakespace.com.  As it’s also March Break at many schools, the kids will love helping you make this sweet drink that consists of pineapple juice, lime juice and lime sherbert.  Sherbert was always my favourite cold treat as a kid.  A touch of green food colouring makes this drink festive whether you stay home with the kids or are throwing a party.  Either way, enjoy your day…and the punch!

EASY ST. PATRICK’S DAY PUNCH

46 oz pineapple juice
24oz limeaid concentrate
5 drops green food color (optional)
1 liter 7 up
lime sherbert

Mix the pineapple, limeaid and food color , pour into a punchbowl add 7 up scoop lime sherbert into punch.  Enjoy!

It Only Takes 10 Minutes To Prepare This Game Day Snack!

With the Superbowl coming up this Sunday, I wanted to share a dessert that is easy, quick and guy-friendly.  I found this recipe for Milk Chocolate Popcorn at CooksRecipes.com and thought it was the perfect sweet snack for game day.  It’s got the best of both worlds with chocolate for sweetness and peanuts for saltiness.  All you need is 5 ingredients and 10 minutes to put it all together.  Plus it’s an easy snack to scarf down while your eyes are fixed on the tv.  I hope this dessert scores a touchdown in your house this Sunday!  Enjoy!   

SUPERBOWL CHOCOLATE POPCORN

12 cups popped corn
1 (12-ounce) can salted peanuts
1 3/4 cups (11.5 ounce package) NESTLÉ® TOLL HOUSE® Milk Chocolate Morsels
1 cup light corn syrup
1/4 cup (1/2 stick) butter or margarine

Preheat oven to 300°F (150°C). Grease large roasting pan. Line serving plate with wax paper.

Combine popcorn and nuts in prepared roasting pan. Combine morsels, corn syrup and butter in medium, heavy-duty saucepan. Cook over medium heat, stirring constantly, until mixture boils. Pour over popcorn; toss well to coat.

Bake, stirring frequently, for 30 to 40 minutes. Cool slightly in pan; remove to prepared serving plate. Store in airtight container for up to two weeks.  Makes 14 servings

It Only Takes 15 Minutes To Prep This Cream Cheesy Dessert!

Growing up, I refused to try flan.  I assumed it had a jello-like texture which didn’t appeal to me.  Then, a few years ago, I decided to try this recipe with cream cheese.  I don’t know why I was being adventurous, but I’m so glad I was.  This recipe for Creamy Caramel Flan from Allrecipes.com is absolutely fabulous!  Not only is this dessert easy and quick, taking only 15 minutes to prepare and requiring 6 ingredients, but it’s not jello-like at all.  In fact, it has a smooth, creamy texture…hence the name…and the flavour is outstanding!  It tastes like a caramel cheesecake.  If you’re like me and feel unsure about flan, give this recipe a try.  I’m confident you’ll love it.  Enjoy! 

CREAMY CARAMEL FLAN

3/4 cup white sugar
1 (8 ounce) package cream cheese, softened
5 eggs
1 (14 ounce) can sweetened condensed milk
1 (12 fluid ounce) can evaporated milk
1 teaspoon vanilla extract

Preheat oven to 350 degrees F (175 degrees C).

In a small, heavy saucepan over medium-low heat, cook sugar, stirring, until golden. Pour into a 10 inch round baking dish, tilting to coat bottom and sides. Set aside.

In a large bowl, beat cream cheese until smooth. Beat in eggs, one at a time, until well incorporated. Beat in condensed and evaporated milk and vanilla until smooth. Pour into caramel coated pan. Line a roasting pan
with a damp kitchen towel. Place baking dish on towel, inside roasting pan, and place roasting pan on oven rack. Fill roasting pan with boiling water to reach halfway up the sides of the baking dish.

Bake in preheated oven 50 to 60 minutes, until center is just set. Cool one hour on wire rack, then chill in refrigerator 8 hours or overnight. To unmold, run a knife around edges of pan and invert on a rimmed serving platter.

You Only Need 20 Minutes To Make This Low Fat Treat!

I have friends that are trying to lose weight this New Year, but don’t want to cut out sweet treats, so I’m happy to have found this low fat recipe for Warm Chocolate Pudding on RealAge.com.  Even better, is that this dessert is both easy and quick, only taking 20 minutes to make and requiring 7 simple ingredients.  I’ve always loved chocolate pudding better than any other flavour.  Strangely, I’ve never had warm pudding before but I can imagine a creamy, smooth, soothing dessert for a cozy winter’s night inside.  And the fact that it’s low in fat, doesn’t hurt either…just remember to skip the whipped cream on top.  Enjoy!   

LOW FAT WARM CHOCOLATE PUDDING

1 large egg
2 1/4 cup(s) nonfat or low-fat milk, divided
2/3 cup(s) sugar, divided
1/8 teaspoon(s) salt
2/3 cup(s) unsweetened cocoa powder
2 tablespoon(s) cornstarch
1 teaspoon(s) vanilla extract

Lightly beat egg with a fork in a medium bowl.

Combine 1 1/2 cups milk, 1/3 cup sugar, and salt in a medium saucepan; bring to a simmer over medium heat, stirring occasionally.

Meanwhile, whisk the remaining 1/3 cup sugar, cocoa, and cornstarch in a medium bowl. Whisk in the remaining 3/4 cup milk until blended. Whisk the simmering milk mixture into the cocoa mixture. Pour the mixture back into the pan and bring to a simmer over medium heat, whisking constantly, until thickened and glossy, about 3 minutes. Remove from heat.

Whisk about 1 cup of the hot cocoa mixture into the beaten egg. Return the egg mixture to the pan and cook over medium-low heat, whisking constantly, until steaming and thickened, about 2 minutes. (Do not boil.) Whisk in vanilla. Serve warm.

This Chocolate Spread Is Good In Desserts Too!

I’ve loved Nutella since I was a kid and remember taking those delicious chocolate sandwiches to school for snack time.  But back then I only spread Nutella on bread and had no idea you could actually bake with it.  Well I just found an article at Suite101.com that shares two Nutella dessert recipes that are both easy and quick!  The first one is called Nutella Dessert Roll Ups and is a mix between a cinnamon roll and fried Mexican tortillas.  Sounds sweet and delicious to me!  The second recipe is for Nutella Cookies and it uses only 3 ingredients.  I can’t wait to try both!  Please let me know what you think about these treats and feel free to share anymore Nutella recipes with me.  Enjoy!

NUTELLA DESSERT ROLL UPS

1 10-inch flour tortilla
½ teaspoon sugar
½ teaspoon cinnamon
1 tablespoon butter
2 tablespoons Nutella spread

Place tortilla on rack in a toaster oven. Toast at 350° for three to four minutes.

While the tortilla toasts, combine sugar and cinnamon in a small mixing bowl.  Add the butter and Nutella to the cinnamon-sugar mixture, and blend until creamy.

Remove the tortilla from toaster oven, and place on a large platter or cutting board.  Spread the Nutella mixture evenly on the tortilla.  Roll up the tortilla, and then cut into even slices.  This recipe is makes approximately eight roll ups using one flour tortilla. For larger serving sizes, simply repeat the process for each tortilla.

NUTELLA FLOURLESS COOKIES

1 cup Nutella spread
1 cup sugar
1 egg

Preheat oven to 350°.  Spray baking sheets with cooking spray such as Pam. 

In a small bowl, mix all ingredients until creamy and smooth.  Form into one-inch bowls and place on the greased baking sheets.  If desired, dip a fork in water and make crisscrosses on the top of cookies like peanut butter cookie recipes suggest.  Bake for 8 to 10 minutes.  Remove from oven and let cookies set three to five minute on the baking sheets.  Remove from baking sheets and let cool.

This Dessert Sauce Takes 10 Minutes To Make!

Listen up coffee lovers!  I know you’re out there!  I found a dessert sauce that’s easy and quick to prepare and is a great topper for ice cream and cakes.  It’s from Examiner.com and it’s called Coffee Rum Sauce.  You only need 4 ingredients, or 3 if you leave out the nuts, and it takes about 10 minutes to make.  This recipe seems to be a spin off of Bananas Foster, which I shared in a previous post, except that it has coffee and no bananas.  So if you prefer coffee over bananas, then this is the dessert for you, but if you love both, then maybe an amalgamation of recipes is in order.  Please let me know if you experiment!  Enjoy! 

EASY COFFEE RUM SAUCE

1 cup strong, fresh-brewed coffee
1 cup sugar
¼ cup of dark rum
½ cup chopped walnuts

Combine coffee and sugar in saucepan over low heat, stirring constantly until it boils. Boil for 3 minutes, then remove from heat. Let mixture cool. Stir in rum and walnuts.

Optional: Serve with unsweetened whipped cream flavored with rum.

This Patriotic Dessert Takes Only 20 Minutes To Make!

Although I’m Canadian, I can feel the energy and excitement for Independence Day all the way across the border.  I envy the strong nationalism in the United States so much that when July 4th rolls around, I want to take part in the festivities.  The best way I know how to do that is by baking a red, white and blue treat.  And this year I found one so easy that I don’t even have to bake it!  It’s from About.com and it’s called Patti’s All American Trifle.  I altered the name a little because it really is the easiest trifle recipe I could find.  It only takes 20 minutes to prep and assemble the delicious layers of vanilla pudding, whipped topping, berries and angel food cake.  Not only is this dessert easy and quick, it also contains all the right colours for a patriotic celebration.  Happy Independence Day!

EASIEST ALL AMERICAN TRIFLE

2 (12oz.) containers whipped topping, thawed
1 (5.9) ounce package vanilla instant pudding
1 whole angel food cake, cut into 1 inch cubes
Sliced fresh strawberries and blueberries
Slivered almonds (optional)

Prepare instant pudding according to package directions. Layer trifle ingredients as follows from bottom of trifle bowl to top; 1/3 Cool Whip, 1/2 of cake cubes, 1/2 of pudding, strawberries, 1/3 Cool Whip, cake cubes, pudding, blueberries, remaining Cool Whip, and top with slivered almonds.

Only 145 Calories Per Cup…And It’s Filling!

In my last post, I shared some tips on how to reduce food cravings in the hopes of not over-indulging…something I know a little bit about lately.  I’ve recently tried on some of my summer clothes from last year and discovered that I can no longer pull a few of them over my thighs.  I wanted to blame my weight gain on my research for this website, but I honestly know that it’s because of my lack of will power and my never ending hunger.  I always snack between meals and my choices aren’t the healthiest…somebody has to eat all those cookies and brownies I make for this site!  So I was very happy to find this recipe on RealAge.com for a Buttermilk and Avocado Smoothie that promises only 1 cup will fill you up and only has 145 calories.  Sounds good to me, and I LOVE avocado!  This may not be the usual dessert recipe that I post, but don’t worry, there will be more delectable treats to come.  In the meantime, I’m going to have a smoothie to crush my hunger.  Enjoy!

TANGY & COOL BUTTERMILK & AVOCADO SMOOTHIE

1 cup organic fat-free cottage cheese, such as Horizon brand
2 cups 1% low-fat buttermilk
1/2 ripe avocado, peeled, seeded, and diced
1 tablespoon organic agave nectar, such as Madhava brand
4 ice cubes or 1/2 cup crushed ice

Place the cottage cheese and 1/2 cup of the buttermilk in a blender. Cover and blend until fairly smooth, about 30 seconds. Scrape down the sides of the blender; add the avocado. Cover and blend until fairly smooth, about 30 seconds. Add the remaining buttermilk and the agave nectar; cover and blend 10 seconds. Add the ice; cover and blend until the smoothie is thick and the ice has melted.

Nutritional Information (per 1-cup serving; makes 4)

Kids Can Assemble These Fun Treats in 15 Minutes!

I’ve loved bananas my whole life. Probably because they are sweet and fun to eat, but also because of my love of monkeys. I’m guessing that there’s lots of kids out there who feel the same way I did…and still do. And even for those children who aren’t big banana fans yet, I might have found a recipe to change that! KraftCanada.com has a great banana dessert recipe that’s easy and quick, and perfect for kids to make. It’s called Frozen Banana Treats and not only is the banana dipped in chocolate, but it’s also coated in any topping of your choice. You can dip your bananas in things like nuts, cereal, granola, even cookie bits. It’s easy to be creative with this easy recipe that kids will love! One tip that is posted on the website recommends adding caramel to the chocolate mix for a different flavor, and also melting the chocolate on the unfrozen banana, then freezing the completed treat (supposedly it’s easier to apply the chocolate this way). Well, be creative, try different methods and please let me know what works best for you. Have fun!

FROZEN BANANA TREATS KIDS CAN MAKE

3 small bananas

6 wooden pop sticks

4 squares BAKER’S Semi-Sweet Chocolate, chopped

1 Tbsp. butter

1/4 cup KRAFT Smooth Peanut Butter

Chopped nuts, flaked coconut or candy sprinkles

PEEL bananas and cut them in half. Insert 1 wooden pop stick into each piece of banana. Freeze until firm (about 4 hours).

MELT chocolate, butter and peanut butter in microwaveable bowl on HIGH for 1 1/2 minutes; stir until melted.

PAINT frozen bananas with chocolate mixture using a pastry brush, then roll in chopped nuts, flaked coconut or candy sprinkles.
