Easy Banana Praline Muffins

I was at my sister’s house last week and noticed 3 very ripe bananas sitting on her kitchen counter. When she told me that they would probably end up in the trash can, I quickly jumped into action, searching for recipes online. However, I had a big challenge…my sister isn’t a baker so she doesn’t have some essentials like baking soda and baking powder. Actually, I don’t think she even had any flour! Needless to say, my options were slim but I did find this dessert that’s super easy and quick to make, using pancake mix! It’s from Allrecipes.com and takes only 30 minutes from start to finish. My sister raved about these because they’re extremely moist and delicious. It’s a perfect recipe for those ripe bananas or for those who don’t know what to do with extra pancake mix. Enjoy!
EASY BANANA PRALINE MUFFINS
1/3 cup chopped pecans
3 tablespoons brown sugar
1 tablespoon sour cream
1 egg, lightly beaten
3 small ripe bananas, mashed
1/2 cup sugar
1/4 cup vegetable oil
1 1/2 cups packaged pancake mix
In a small bowl, combine pecans, brown sugar and sour cream; set aside. Combine egg, bananas, sugar and oil; mix well. Stir in pancake mix just until moistened. Fill greased or paper-lined muffin cups two-thirds full. Drop 1 teaspoon of pecan mixture into center of each muffin. Bake at 400 degrees F for 15-20 minutes or until muffins test done.
